Kozaemon Junmai Ginjo Sakura - This sake is only available once
a year in the Spring. It is completely unpasteurized and comes right out of the tank. Roughly filtered leaving some ‘ori’ lees left which gives it a layer of texture and bright hints of melon and asian pear. This nama sake has a slight grapefruit pith bitterness on the nose but this is more prevalent on the palate with a gamey wildness. It has good weight and is not overwhelming in richness. As it warms up, the elements are cohesive with bold aromatics and a good acidity to support it.
Kozaemon is made by a small brewery in the mountainous Gifu prefecture, located in the central region of Japan. Since 1702, Nakashima Brewery has been committed to brewing honest sake.
Nightingale’s Garden Pink Doburoku - Doburoku is an unfiltered sake that was home brewed among rice farmers until the Meiji era (1868). It is brewed using the same ingredients as sake but the mash is not filtered. This sake is made with red yeast, it has a sweet and sour taste such as strawberry. Serve chilled.Low in alcohol (9%) with thick, creamy, yogurt-like sweetness and acidity.
Perfect summer sake that can be enjoyed on its own or pair with BBQ, pork belly, mapo tofu, etc.
Yamaguchi brewery is located in Southern region of Fukuoka prefecture and has been in the family since 1688, now in its 10th generation. It is said that nightingales used to play in the water baths in the courtyard of the brewery.
