Taka | Yamaguchi
This brewery was established in 1888, and is today run by Takahiro Nagayama, the 4th generation Toji. At the heart of the “Taka” brand, is the concept of rice terroir and outstanding quality. Taka-San can be likened to a grower-producer in Champagne; he actually owns the rice plots that he makes sake from, and the rice plots surround the brewery where the sake is made. Starting with his relationship with the farmers, to the finished sake in the glass, these junmai sakes are brimming with character, personality, and age-ability.
