A sommelier’s Champagne from Ambonnay Grand Cru fruit. Rich but super precise, with baked apple, toasted hazelnut and that signature chalky minerality. Powerful without being heavy. This is the bottle for people who really know Champagne.Â
Pinot Noir and Chardonnay blend from 15 different parcels over 4-5 vintages with a portion of the base wine vinified in barrel and partial malolactic fermentation. Up to 7 years of lees ageing and no more than 5g per litre of dosage.
Tasting Note: An attractive bouquet of bright red apples, lemon, flowers that open the palate which is broad and ample with brisk acidity and hints of mineral on the finish. A wine with great elegance, clarity, and vivacity
Pascal Doquet – Arpèges 1er Cru Brut Nature Blanc de Blancs
100% Chardonnay, 66% from 2015, the rest from a 2012 solera reserve, 70 months on lees, beautiful tension, lemon, red apple, toasted brioche.
Zero dosage, all about purity. Bright citrus, saline minerality and razor-sharp acidity. Clean, focused and incredibly food-friendly. If someone says they want “crisp and dry,” this is the move.
Alexandre Lamblot – 2017 Mouvance
Grower Champagne with a bit of edge. Textural, slightly oxidative, with orchard fruit, spice and a touch of funk.Â
Pinot Noir dominant (65%) supplemented by Pinot Meunier (25%) and Chardonnay (15%). Fruit sourced from multiple parcels from the villages of Vrigny and Chenay where soils are clay-limestone based and vines average 25-50 years. Natural yeast ferment, maturation in oak before secondary ferment, 24 months on lees before disgorging, hand riddled, hand disgorged, zero dosage.
Tasting Note: Aromas of baked apple, citrus, apricot with hints of fresh dough, chalk mineral, beeswax, white flower on the nose. Bright and fleshy on the palate with a ripe yellow orchard core, fresh acidity, great textural balance, very fine mousse, and chalk notes on the finish.
