Flagship sake of Ippaku Suisei! This Premium Junmai Daiginjo is brewed using the best rice of the season. After the harvest, the brewer looks at different aspects of the rice varieties available and determines the one with the highest quality. This is the rice that will be used to produce that year’s Premium Junmai Daiginjo.
Taiheizan Chronicle <太平山 生酛純米 神月>
This is a Kimoto sake made without adding lactic acid. Depth and complexity are the usual suspects but this sake is also brewed with UNESCO World Heritage site water from the Shirakami mountain range. Pure, soft texture and delicate intensity that Miyamanishi is known for is expressed well in this bottle.
Naminooto Junmai Ginjo Wataribune 60 <波乃音 純米吟醸 渡船 60>
Brewed 100% with the local rice variety “Wataribune”. Clean and light with slight Ginjo nose. Excellent balance with sharp finish. Perfect food pairing sake with umami and acidity. Naminooto Shuzo was founded in 1805 in Shiga Prefecture right by Lake Biwa, the largest fresh water lake in Japan.
