- Jikon Tokubetsu Junmai - The Kiyasho Shuzo Brewery is a small family-owned brewery founded in 1818 in Nabari City of Mie Prefecture. Traditional techniques and craftsmanship combined with modern technology and knowledge have made Jikon one of the most sought-after brands in the market.
A blend of Yamadanishiki with Gohyakumangoku and(or) Hattannishiki grown locally in Mie. All rice is milled down to 60% and the Yamadanishiki is used for the Koji rice portion of the sake. Yeast #9 is used for fermentation.
- Tengumai Yamahai Muroka Nama Genshu - Shata Shuzo was founded in 1823, late in the Edo Period. The name, "Tengumai," means, “dance of the Raven Gods,” and it is said that the Tengu started to dance when they drank this sake. Since then, the Shata family has continued to brew sake in the traditional Kanazawa tradition.
Brewed with local Gohyakumangoku rice polished to 60%. Earthy and complex, with bursting notes of cucumber and squash gives this sake brightness and lift to pair with a wide range of flavours.
- Naka Naka Shochu - Kuroki Honten, founded in 1885 in Miyazaki Prefecture, is run by Shinsaku Kuroki, he has been a major contributor to the evolution of the Shochu world, with his respect for tradition as well as new ideas. At the core of the brand are its commitment to organic farming and an eco-friendly approach to all aspects of the operation.
An un-aged version of the famous Hundred Years of Solitude shochu. Spicy barley aromatics with notes of cocoa and earthiness.
