Those who are looking for low intervention sakes :)
- Shichihonyari (Seven Spearsmen) Junmai Wataribune No.6 – Rich and ‘ricey’ umami with bright acidity. The rice “Shiga Wataribune No.6” was initially grown in Shiga back in 1895 but it almost disappeared from production as farmers chose to grow less difficult rice strains. However, it successfully made a comeback in 2001. One of the rarest sake rice varieties in Japan.
- Taka Junmai Daiginjo Akaiwa Omachi Purple Label - Brewed with the noble rice, Omachi, this sake has a distinguished masculine personality. Robust and full-bodied, with a solid backbone of powerful acidity. The nose is of opulent tropical fruit, with a clean finish.
-
Sohomare Kimoto Tokubetsu Junmai - Brewed with Grade A Yamadanishiki in the Yokawa region of Hyogo Prefecture. Amazing balance of sweetness/umami from rice an acidity from the Kimoto brewing method. This sake has concentrated flavours and a smooth finish. Serve chilled to enhance acidity.
Serve warmed to bring out sweetness and umami.
